Tonight I came home extremely tired and my husband told me to go take a nap & he would take care of dinner & the kids. First I was a little resistant because I had so much to do but then I told myself seize the moment! So I did. I slept for about 2 hours and woke up super energized. I cleaned and decided to cook dinner for tomorrow. My kids love Taco Tuesday's but I wanted to be a bit creative. I decided to make Crock pot chicken taco's. This recipe is suppose to be extremely easy, but after looking through my cabinets I realized I was out of Taco seasoning. So I decided to make my own, then realized I was out of chili powder....so guess what? I decided to make my own. Nothing was slowing me down tonight! I have a few recipes to share with you.......
Homemade Chili powder
2 tablespoons ground chilis - ancho is best, but paprika can do in a pinch
1 tablespoon ground cumin
1 tablespoon dried Mexican oregano
1/2 teaspoon cayenne
1 tablespoon garlic powder
That was simple enough, now Homemade Taco Seasoning
1 tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon dried oregano
1/2 teaspoon paprika
1 1/2 teaspoons ground cumin
1 teaspoon sea salt
1 teaspoon black pepper
It taste just like Taco seasoning! One of the perks of making your own is you can regulate the sodium!
Now that we are past those 2 stumbling blocks onto the recipe
1 Envelope Taco Seasoning
3-6Pieces Boneless, Skinless Chicken Breasts
1 16-ounce jar Salsa
Dump everything into a crock pot and stir it around to blend the seasoning with the salsa. No water required for the taco seasoning. Cook on high for 4 to 6 hours or on low for 6 to 8 hours. When done, the chicken should shred easily when stirred with a fork.
For tacos, serve the chicken with soft flour tortillas, guacamole, lettuce, shredded cheese and/or sour cream. This is very versatile and can be used for enchiladas, nachos, tostadas, quesadillas, etc. Any leftover chicken can then be used for tortilla soup (make it the next day or freeze the chicken to use at a later time).
I think we are having Taco salad!!! Yummy!
