Tonight I tried a new recipe, Orange chicken. OMG.....it was delish! Everyone wanted seconds!! I wanted to do something different with my chicken. We were tired of the usually so I decided to step out of the box. Which is not unusual for me, but anyway, I came across 2 recipes on Pinteret so I combined them to make my own. I hope your family enjoy it as much as mine.
{ingredients}
2 chicken breasts, chopped into bite sized pieces
3 T olive oil
1 cup orange juice
1 tsp honey
1 tsp honey
zest from 1 orange
3 T low-sodium soy sauce
1 t sriracha
3tbsp cornstarch
1/2 tsp ginger
1/2 tsp garlic, minced
2 tsp green onion chopped
1/2 tsp ginger
1/2 tsp garlic, minced
2 tsp green onion chopped
1/4 cup water
1/4 cup brown sugar
1/4 cup brown sugar

In a medium size sauce pot, add the orange juice, zest, ginger, soy sauce, honey, garlic, vinegar, brown sugar and sriracha. Set over medium heat and let simmer to reduce and thicken while the chicken cooks. In a saute pan, heat 3 T of olive oil, over medium high heat. Add the chopped chicken and cook until a nice brown crust has developed on the chicken pieces, about 6 minutes. In a separate bowl add cornstarch to water and add to orange sauce. Allow to simmer for thickening. Add the chicken to the sauce pot and stir to coat with the orange sauce. Serve over rice topped with chopped green onions, broccoli and wheat rolls!
